Eggs on Toast with Avocado and Goat Cheese

What do you eat when you’re alone, cooking for yourself? What strange things do you enjoy eating when no one else is watching?

Mine is eggs.

Eggs anywhich way – scrambled, poached, fried. On toast or just on a plate. I love breakfast and I love eggs, so I find that whenever I’m home alone and I need to cook dinner – this is what I cook. This particular fried egg on toast with avocado and goat cheese is my most often made version. I love love avocado and I love love goat cheese – putting their two creaminesses together is a dish made in heaven.

J can’t understand why I always make eggs when he’s out. “Why don’t you eat leftovers?” He wrinkles his nose. “Is that going to be enough to eat? How can you love eggs so much?” I don’t know, I just do.

Once I read a whole book about what meals people loved to cook for themselves when they were alone. It was fascinating.

If you don’t eat these eggs for dinner like me, then I suggest you try them for breakfast – it’s also one of my favourite quick work-morning breakfasts to whip up before I run out the door.

Fried Eggs on Toast with Avocado and Goat Cheese
Yields 1
A quick before-work breakfast - and I won't judge if you want to eat it for dinner too!

  1. 1 organic, free-range egg
  2. 1 piece of whole grain bread
  3. half an avocado
  4. soft goat cheese
  5. salt and pepper
  1. Fry your egg, as you like (sunny side up is what is pictured - personally I prefer hard fried, but doesn't make for a pretty picture!)
  2. Toast your bread.
  3. Once egg and toast are ready, spread a good schmear of goat cheese on your toast (the more, the better!) Then mash your avocado on top. Top with your fried egg and crack some fresh salt and pepper.

    I eat this EXACT thing every morning for breakfast! There is something about goat cheese, avocado, and a runny egg yolk that is just so delicious! I prefer my goat cheese to be a herb infused one, but if I don’t have any of that on hand, I’ll add some parsley and garlic to it :) So delicious.

      A fellow egg lover, hooray! I love herb infused goat cheeses too – one time I went to a goat cheese farm (!) and they had a lemon basil infused goat cheese and it was to-die-for!
