Seared Tuna Tacos with Corn Salsa

Wednesday, January 21, 2015 2 0

I made a deal with myself that when the blog reached a certain number of page views I would go public with the lovely. By which I mean actually tell people. Right now I have all you lovely readers, but I don’t ever mention that I’m a food blogger in conversation. It’s been a passion project and I wanted to keep it quiet while the blog was still small. Well, the lovely just put on her big girl pants!

I can’t believe it’s taken me this long to share these Seared Tuna Tacos with Corn Salsa. J and I LOVE.THEM. Love is not even a strong enough word. I lust after these tacos. We eat them at least once a week in the summer and often in the winter – they are the perfect blend of creamy and spicy and who doesn’t love seared tuna?! I could eat seared tuna for days.

Simple Creamy Butter Lettuce Salad with Toasted Pine Nuts

Sunday, December 28, 2014 0 0

This Creamy Butter Lettuce Salad is wonderfully light and simple – perfect to bring in the new year. I don’t know about you, but I’ve eaten my share of sweets over the holidays!

 Toasted Pine Nuts

J and I served this salad as part of my mom’s birthday dinner over the holidays – we treated her to a homemade dinner where she didn’t have to lift a finger! It was J and my first time cooking dinner for 11 people, and it went off without a hitch! This Simple Creamy Butter Lettuce salad was an easy contributor to the success of the meal – it pairs well with just about any dish! We served it with Chicken Marbella and Roasted Maple Carrots (recipes to come!).

Penne with Prosciutto, Sage, and Mushrooms

I have given up on trying to fight with J over pasta. In his ideal world, he would eat pasta 3x a week or more, and I would rather eat some veggies and not a meal full of carbs. I used to dig in my heels and not cook pasta ever (I have the power since I plan our meals!), and then I realised this made him a grumpycat and really – is eating pasta every once in a while worse than having a grumpycat boyfriend? I think not.

Potato Bacon Feta Breakfast Frittata

Tuesday, September 16, 2014 0 0

I love breakfast. How can you not?! Any excuse to eat bacon or douse my plate in maple syrup! It’s my favourite meal – I could eat breakfast for breakfast, lunch, and dinner!

J and I love making yummy breakfasts at home on the weekends, but we often fall into making the same things – usually poached eggs, waffles, or french toast. The other weekend we decided to shake things up – I had just purchased a cast iron pan (!!!) and we’d bookmarked a frittata recipe in the Smitten Kitchen cookbook. Since I can never follow a recipe, we made a few tweaks (if I’m being perfectly honest, J made the majority of this breakfast while I practiced yoga on our roof! A good man he is!) The result was absolutely delicious – if a little more labour-intensive than just boiling water for a poached egg ;)

If you’ve got some extra time, or are making brunch for friends, this frittata is worth it!

Cocktail: Rosemary Bourbon Citrus Fizz

Monday, September 1, 2014 2 2

Happy Labour Day! I can’t believe it’s already the 1st of September – and already the weather feels more like Fall! There’s a cool breeze in the air and I’m wearing a cozy sweater.

This Rosemary Bourbon cocktail is perfect for ushering in Fall. The hint of Rosemary adds a lovely herb flavour while not overpowering the delicate lemon and bourbon flavours.

Creamy Chicken Penne with Sundried Tomatoes, Pesto, and Goat Cheese

This creamy pesto pasta recipe is one of our “staples.” In fact, it’s our only staple pasta recipe. J loves pasta, while I feel sluggish and heavy after eating a pasta dinner, and so because I plan our meals, we hardly ever eat pasta. ;) J gets unhappy when we don’t have his beloved pasta for weeks on end, so whenever he starts getting cranky, I’ll appease him with this pesto pasta!

It’s a quick recipe to make – all you have to do is fry the chicken, add everything else to the same pan, and you have a delicious, creamy pasta sauce. Which makes this a great week-night meal. If you want to feel sluggish afterward, that is ;)
