Honey Ginger Glazed Carrots

When J and I first started dating, the concept that a guy would like to cook was foreign to me. Until that point, I’d never dated a guy who wanted to hang out in the kitchen with me, much less cook together. I can remember being in awe the first time we cooked a dinner together because he actually enjoyed it. These honey ginger glazed carrots were one of the first recipes we cooked together, and now they are an autumn staple in our house. In fact, we cooked them so much at one point that we got sick of them!

A little bit sweet and a little bit spicy, these carrots remain one of my favourite vegetable recipes. We’re trying to eat through the carrot haul from our garden this year and there are still so many more to go! I sense some more carrot recipes coming up on the blog (pssst – my favourite carrot cranberry muffins!)

Podcasts are having their heyday right now – it seems like everyone and their dog is starting a podcast and I love it! I listen to podcasts in the car, instead of turning on the radio, while I’m getting ready in the morning, at the gym, and at work (when I’m not doing something that requires me to be super focused). It’s such a great way to be exposed to new ideas and learn a lot! There are so many podcasts targeted to food bloggers (and for bloggers and food lovers separately!) These are my favourites. 


Balsamic Beet Crostini

One of the vegetables that absolutely flourishes in our garden are beets. They’re perfect for our mild northwest climate, and they grow wonderfully in containers. Every year, we plant at least three containers of beets, in staggered timing so they don’t end up ripening all together. (But inevitably, there ends up being a time – and that time is now – when we feel overwhelmed with beets!)

Beets and goat cheese are a match made in heaven. There’s a reason why if you google beet and goat cheese salad, you’ll return 36,793 results. I thought I’d put this classic combination on crostini (fancy name for toasted baguette slices) and drizzle it with even more deliciousness – balsamic reduction – to create a Balsamic Beet Crostini. Thyme adds the flavour of Fall, making this a wonderful and simple appetizer to serve at an autumn dinner party.


BBQ Dill Potatoes

Summertime makes me feel different – there is a hazy laziness in the air – a more accepting, laid-back tone, a greater appreciation for the best things in life: water, sun, wine.

Even though summertime is often the busiest time of the year, we approach it differently, in a more measured way. Dinner is eaten when we drag ourselves away from the garden and the sun, and while J turns on the BBQ to grill some meat, I slice some veggies. Our dinners are usually casual, without following big recipes. Often we eat salads, and that is cool and refreshing, and often enough.
