Happy FriYAY! Today is the day that marks that I have been 4 weeks – 1 full month – at my new job, and that feels like a reason to celebrate! My new position came with a steep learning curve, so 4 weeks of brain melt is now behind me!

And – yesterday we celebrated 1 year exactly until our wedding day! I can’t even believe we’re counting down less than a year now. SO EXCITED!

Cherry Tomato Bruschetta

If you’ve ever eaten a tomato straight from the garden alongside one of the pulpy, flavourless varieties found in the grocery store, then you will know that nothing can ever compare. Fresh tomatoes burst with flavour, tasting almost sweet with their ripeness. 

I can’t get enough of all the cherry tomatoes growing in our garden. Every day there are literally a hundred more ripe tomatoes to pick. Which has actually become a bit overwhelming. No-Knead Cheddar Chive Crusty Bread

It’s another recipe in the no-knead bread series! (I didn’t know it was a series, but now that I’m posting two no-knead bread recipes in a row… I guess it is!)

After I made basic No-Knead Bread, I was itching to try out other flavour combinations. I wanted to make a cheesy bread, and since our garden is overflowing with chives, No-Knead Cheddar Chive Crusty Bread was born! Let me just reiterate: this recipe requires no kneading, no muss, and no fuss – the only requirement is wait time. For this recipe, I mixed together the ingredients the night before, then baked the bread around noon the following day. Perfect for baking on a weekend. Especially on all those rainy Fall weekends that are coming up!

Homemade No-Knead Bread

Let’s just first give credit to the guy who invented homemade no-knead bread: Jim Lahey, owner of Sullivan Street Bakery. GENIUS. Homemade bread is a magical, magical thing. But unfortunately, no one has the time to let it rise, and knead, and rise, and knead, and rise. At least I don’t. Unless it’s a super rainy weekend in mid-November and I have nothing else to do. (Never happens.) 

The fact that this recipe allows you to mix up your bread, set it out on the counter, DO NOTHING, and then 12-18 hours later have your own homemade bread is mind-blowing! Yes, I did say DO NOTHING. No kneading whatsoever. The smell alone of bread baking in the oven makes this recipe worthwhile. 


Chewy Oatmeal Raisin Cookies

Oatmeal Raisin Cookies are a classic. They were a cookie that often graced the shelves of my childhood home. They make me think of riding my bike with training wheels, water balloon fights with the other kids on our street, our woodshed where I would play “pioneers”, and our old swing set. They also make me think of the other foods I loved as a child: Cheese Whiz and Pizza Pops. (EWWW!)

This recipe is for Chewy Oatmeal Raisin Cookies that are perfectly spiced with cinnamon and will fill your house with warm aromas. Curl-a-blanket-around-yourself aromas. Too soon? I know, I know, it’s not Fall yet! But we’ve had some cool nights lately, and I can’t help but think about all the amazing smells and tastes of Fall.


Fresh Corn Salsa

My very favourite thing to grow in our veggie garden (apart from all the herbs) is cherry tomatoes. Homegrown cherry tomatoes taste so sweet and so unlike the hard flavourless tomatoes that you find in the grocery store. Every summer when our tomatoes ripen, I eat as many as I can get my hands on. This summer, because of the mild winter in the Pacific Northwest, our gardens are a full month early, and so we’ve been enjoying our tomato crop for the past few weeks – usually they ripen late August.

Another one of my favourite summer veggies is corn on the cob. Recently, J and I went on vacation to the Okanagan region (home of hot weather, orchards, and wine), and brought back bags of fresh peaches-and-cream corn. (We also brought back a case of peaches, but that’s a story for another day!) We’ve mostly been eating the corn straight up, cooked on the BBQ, as a side to our dinners. But on this night I decided to meld two of the summeriest flavours together into a Fresh Corn Salsa.
